Pale lemon straw colour, clear and bright, with an immediately expressive nose of citrus, exotic spices, stone fruit, kumquat, “botterblommetjies” and chamomile tea, rounded off with a touch of chalkiness. On the palate the layered complexity of nuttiness, apple, pickling spices, white citrus blossoms, grapefruit pith and a fine minerality surprises. Beautiful salinity on the palate with waxy, lanolin notes – feminine and light, evolving ever so slowly in the glass to show nuances of sweet biscotti. The beautifully balanced acidity and intense core complements a wine that is fresh, crisp and elegant with tremendous depth. Best served with white fish like sea bass in an ethereal light sauce.
